I can't help it, but I don't like veggies, at least not for the most part or not as other people like them.
Carrots, for example: I can manage if they have been roasted, with butter applied, until they begin to blacken and no longer taste like carrots.
Sue has also found a way to get me to eat cauliflower.
First she steams the cauliflower to begin to soften it. I don't prefer crunchy, especially in vegetables.
Then she applies a mayonnaise and mustard glaze -- just regular, yellow mustard.
The glaze allows the next layer -- cheese -- to stick. Getting extra cheese on the dish is also part of the plan.
AC finds the resulting dish pretty darn delectable and suggests that, even if you are already a veggie lover, that like Sue, you will like this concoction.
This looks delicious! You might like small pieces of cauliflower mixed into macaroni and cheese. The pasta and cauliflower have the same kind of colour, so barely noticeable to the eye.

ReplyDeleteGreat sounding recipe. Unfortunately I have to avoid read cheese these days (high fat content). But if I could eat it, yum! Glad you like your carrots. You'd have a tough time on my current diet!
ReplyDeleteSeems like all that would hide the flavor of the cauliflower. Dan doesn't like it and will tolerate small amounts cooked but I do like it and eat it raw and crunchy in salads.

There are a number of veggies that are not served in our home because at least one of us, who shall remain nameless (but it's not myself) do not enjoy. Luckily we both enjoy cauliflower in various forms and this recipe is one we would like because anything with cheese is a favorite. Can you check with Sue and update this post to include the oven temp that is used for the baking? I am sure others would be interested as well. Thanks!

ReplyDeleteI love cauliflower in any shape or form, and I would LOVE this. Mustard and cheese are two of my other favorites. Yummy! The picture literally made my mouth water. Like you, I prefer my carrots cooked. For some reason they're not my favorite veggie.

Yum. My mother-in-law used to do a baked cauliflower and cheese dish, but this one looks even more decadent. Way to go, Cuppa.

Just read your other comments. Baking temp would be a plus. I will trade a recipe for parsnips with maple syrup glaze. Even you, AC, would go for those.

ReplyDeleteYour cauliflower looks very delicious! In terms of cuuliflower (and broccoli).... I like mine either crunchy, “el dente” if that term is allowable, or soft..... but not mushy soft.... I do not like many veggies when they are “mushy” soft.
We sometimes bake cauliflower like that and have tried a variety of spices and sauces..... and many are really good. Like your mustard sauce..... we really like that, and we have made a curry sauce/past that we really like too. I am not sure why we never thought of baked cheese on it.... but now we will try that too!

ReplyDeleteThat actually looks very delicious. But I love my cauli anyway, especially cauliflower in cheese sauce with a sprinkle of chees and put under the grill. Or even just cut up, tossed in olive oil and S&P, and roasted, mmmmm good.
