About the Chicken ...

Hmmm, I guess ole AC confused a few of y'all when he wrote about purchasing a rotisserie chicken for lasagna. Actually, I'm quite glad of the confusion because it's nice to see someone other than me confused ... for a change. lol

It's very simple, really. I mostly do light cooking and have come across three recipes for lasagna, only one of which calls for the usual ground beef. And, no kidding, that one doesn't even use lasagna noodles. Really! For that recipe, I slice up three or four zucchinis which I use in place of the noodles. It's a very yummy dish actually, probably the best of the three lasagnas that I do. It's from Dr Phil's diet cookbook by the way.

The other two versions, including yesterday's, are from Crazy Plates by Janet and Greta Podleski. One is a vegetable dish, where I roast a combination of veggies as the main ingredient. Yesterday's lasagna simply calls for chicken as a variant. Just as they do for several other recipes, including Butter Chicken and Chicken Corn Chowder, the authors recommend using a rotisserie chicken from the supermarket because they are quite moist, tasty and pre-cooked.

Anyway, company came, and the lasagna was good. We chatted and laughed. One odd thing did happen though. A coffee shop featuring fair trade coffee has opened in the town that is the nearest neighbour to ours, so we decided give it a try. We trooped in, looked around, turned around, and left. You see, there were only three little tables, and they were each for two — and we were a group of four. Weird!

But that's okay! Canada's favourite coffee stop, Tim Hortons, was just around the corner. You can always rely on Tim's!

Lasagna with ground beef is not one of my favorites. Well, actually, I don't like lasagna no matter what's in it!

God, there are so many good cooks around this blog village. I stink at it. It is not unusual for us to have grilled cheese sandwiches for dinner. If I do have to produce a whole dinner, I stick to the two dishes that I have perfected: beef stew and chili. I can do one or the other. With the beef stew, I buy really good soft rolls and with the chili, I buy some big cinnamon rolls to go with it. People think I am this great cook and the secret is in the bread. Get good bread to go with anything and you are set.

If you can swear the recipe does not have that nasty zucchini taste to it, I would like to have it. But each lasagna recipe I have tried with zucchini in has that nasty flavor to it. You just can't kill it, it seems. MY husband loves it but I only like it fried and do not do it very often.

My husband loves any kind of lasagna though and I may make it for him since he and I both need to lose a little, we need some light recipes that are good. You can email me some if you have any you want to share.

I've not thought about using strips of zuchinni in place of the noodles, but that sounds reasonable if one is diabetic, and my husband is. Perhaps, as an afterthought, you could include the recipe here. We love zuchinni.

Funny that we both blogged about lasagna. I think I might have to try using zucchini instead of noodles. When I made my veg lasagna last night I was thinking how much I liked zucchini in there.

I'm going to try the zucchini idea too. I LOVE zucchini, raw, cooked, roasted, deep fried and it sounds like it would be a great recipe. My family is not as crazy about zucchini as I am so maybe I'll give it a different name and fool them.

Not being a cook.. a rotisserie chicken from Safeway is almost always on my grocery list.

Hmm, I've never had lasagne with chicken in it. I don't use those wide noodles for my "fake lasagne" but regular noodles. Even my fussy brother liked it better than with wide noodles. I mix cottage cheese and cream cheese for the middle and stir in a lot of tarragon.

What a great idea - store-bought rotisserie chicken for use in recipes. I don't eat beef anymore and have missed lasagna. This is worth a try.

Any type lasagna is enjoyed by me, the those new ones sounded very interesting. We have been getting a rotisserie chicken almost every week for the last several weeks. ec

As fond as I am of Tim's, I must say I do my best to support those in the Fair Trade industry.

Seating can be a pain - I'd have stayed if only that I'm a party of one!

Yes, yes, good old Faithful Tim's. We absorbed much of his coffee while pouring over the decision to move or stay here. Thankfully, you can still buy it in Ottawa!

I noticed the abudance of Tim Horton's in the nursery pictures on Cuppa's blog. That is one giant Timmy's mug you have there AC.
